Recipe Party

So, I'm always up for a good party. Pampered Chef, Passion, Recipe Party, you name it and I'll have it. A couple weeks ago I decided to have a Recipe Party where a few of my friends brought up to 5 of their favorite busy night dinners or desserts. I thought it would be a great idea since all of our kids do things after school and we are always rushing home to eat. We had a blast! We ended up chit chatting about our kids, husbands and just plain old life. It's nice to have a little break and talk to people my own age :)

Time to start planning my next party...Botox, tanning or waxing??

Chocolate-Butterscotch Bars

Yield: 3 dozen
1 1/2 cup graham cracker crumbs
1/2 cup butter, melted
1 (6oz) pkg. semi-sweet chocolate morsels
1 (6oz) pkg. butterscotch morsels
1 1/4 cup flaked coconut
1 cup pecans
1 (14 oz) can sweetened condensed milk

Combine graham cracker crumbs and butter; stir well and press into a 9 in. baking dish. Layer chocolate morsels, butterscotch morsels, coconut, and pecans over crumb mixture. Pou milk evenly over top. Bake at 350 degrees for 35-40 minutes. Cool and cut into 1 1/2 inch squares.


Chicken Tortilla Soup

1 1/2 lbs. chicken- cooked and shredded
1 can (15 oz) tomatoes
1 can (10 oz) enchilada sauce
1 med onion, chopped
1 can (4oz) chopped green chilies
1 garlic clove
2 cups of water
2 cups chicken broth
1t cumin
1t chili powder
1t salt
1/4 t black pepper
1 bay leaf

Crock pot low 6-8 hours.


Chicken Pot Pie

Yield 6 servings
1 T butter
1 T olive oil
3 carrots, thinly sliced
2 celery stalks, thinly sliced
1/2 t salt
1/4 t pepper
1 1/2 lbs boneless chicken breast, cubed
1t dried thyme
1/2 cup frozen peas
1 (12 oz) jar chicken gravy
1 (9 inch) refrigerated pie crust

Preheat oven to 350 degrees. Coat a 9 inch pie dish with cooking spray.
In a large skillet, melt half the butter with half the oil. Add carrots and celery, and cook over medium heat for 8-10 min. Sprinkle with half the salt and pepper. Remove from pan and set aside.
Heat remaining butter and oil in pan; add chicken. Add salt, pepper and thyme. Brown on all sides. Continue to cook on medium heat for about 5 min. or until done.
In prepared pie dish, combine chicken, peas, carrots, clelry and gravy. Top mixture with crust, crimping the edges. Cut slashes in the middle and bake for 35 minutes or until filling is bubbling.

I think I'll try the chicken pot pie. Sounds like a fun party to me.
